Masala Chili (Healthy Vegetarian Chili)
20 mins prepServes 6
A comforting, hearty, and nourishing healthy vegetarian chili recipe that uses Indian masala spices instead of typical chili seasoning, creating a delicious convergence of flavors. Made with simple, accessible ingredients including canned beans.
Heat a heavy bottom pot over medium heat. Add olive oil. When the oil shimmers, add the red onion. Sauté until the onions are tender, translucent and golden. Add garlic and sauté for a few minutes. Add spices, and toast until the “raw” masala aroma dissipates. Season with s&p to taste.
Add the carrot and red bell pepper — sauté until slightly tender, then add the crushed tomatoes. Cook the tomatoes with the vegetables, covered, until they darken, and reduce, about 10 minutes — stir frequently. Add the veg broth (start with 3 cups, then add more as necessary if the chili starts to thicken too much — feel free to adjust with broth to reach your desired consistency), followed by the beans.
Simmer for about 25-30 minutes, stirring frequently. Taste and adjust with s&p if necessary & finish with lime. Serve topped with your favorites — I love avocado, pickled onions, vegan sour cream, corn chips, and herbs.
