Masala Sweet Potato & Black Bean Tacos!

Preheat oven to 400 degrees and line a baking sheet with parchment paper. 

In a medium bowl, toss the sweet potatoes in a generous drizzle of olive oil, and add the coriander, cumin, cayenne, and salt. Transfer to the sheet and roast 25-30 minutes, rotating once while roasting, until potatoes are golden brown and tender.

When the potatoes come out of the oven, toss with the black beans. Adjust salt to taste. 

Heat your tortillas and assemble tacos by spreading guacamole on the tortilla, followed by the sweet potato + black beans, salsa, sour cream, jalapeño, cilantro, and a squeeze of lime. Enjoy immediately.
