This No-Bake Crunchy Cookie Bark is an easy and delicious dessert made with just a few ingredients. It features Simple Mills Crunchy Chocolate Chip Cookies arranged and topped with melted dark chocolate, coconut oil, unsweetened shredded coconut, slivered almonds, flaky sea salt, and extra cookie crumbles, then frozen until set.

Line a half sheet with parchment paper and spread 15 cookies out in five rows of three, ensuring they are touching. Reserve the remaining cookies and crumbles for the top of the bark. In a medium bowl, combine the chocolate with the coconut oil and melt in the microwave in 15 second increments until smooth and glossy. Pour melted chocolate on top of the cookies, ensuring it is spread evenly so it “binds” the cookies together when frozen. Top w/coconut, almonds, salt and cookie crumbles. Freeze until the chocolate sets, about 1 hour.
