Peanut Butter Cup Cookies

Preheat oven to 350 degrees. Cream together peanut butter (i used crunchy but you can use creamy too!), beaten egg (can sub 2 flax eggs), melted and cooled coconut oil, maple syrup, and vanilla extract. in a separate bowl, whisk together almond flour, coconut flour, salt, and baking soda. Combine wet and dry ingredients. Now, fold in your favorite peanut butter cups - crush/break them up slightly when you add them in. Form dough into 2-3 inch size amounts and place on parchment lined cookie sheet. Bake for 15 minutes until peanut butter cups are so melty you could die and cookies are golden brown. Sprinkle with flaky salt if you wanna feel fancy. Makes about 10-12 cookies. enjoy!!
