Pumpkin Spice Popcorn Granola Bars

Line a 9x9 square baking pan with parchment paper. Combine the oats, crushed popcorn, almonds, coconut, and pumpkin spice together until thoroughly incorporated. In a separate small bowl, mix together the almond butter, pumpkin, and honey. Mix the wet and dry ingredients. Transfer the mixture to the prepared pan and pack extremely tightly until the mixture is evenly distributed throughout the pan. Transfer to the freezer until firm, 1-2 hours. Melt chocolate with coconut oil and drizzle on top of bars if desired. Enjoy!
