THE BEST PEANUT BUTTER CHOCOLATE CHIP COOKIES - and they happen to be gluten-free & dairy-free!

Preheat your oven to 350 degrees and line a cookie sheet with parchment paper. In a medium bowl, mix together the beaten egg with creamy peanut butter. Add in the vanilla extract, maple syrup, and coconut sugar. The mixture should be thick - fold together thoroughly to get it there. In a separate bowl, whisk together the oat flour and baking powder, then add to other ingredients. You will have to fold the oat flour into the sticky mixture - mix thoroughly until incorporated. Fold in the chocolate chips. Using about 2tbsp of the dough, form into cookies, and transfer to the baking sheet, pressing down lightly on each cookie to slightly flatten. Bake for about 20-25 minutes or until the cookies are golden brown on the outside and bottom. Let cool slightly before enjoying!
