Tigernut Flour Peanut Butter Shortbread Cookies with Chocolate Drizzle

First time working with tigernut flour and I’m obsessed!! It’s a grain-free flour made from ground tigernuts (a root vegetable !!!!!) and it’s nutty & sweet and delicious 🤌🏼🤤worked perfectly to create this insane peanut butter shortbread.
Preheat your oven to 350 degrees, and line a cookie sheet with parchment paper. In a medium bowl, mix together the coconut oil, peanut butter, maple syrup, vanilla extract and coconut sugar. Once everything is full mixed, add in the Tigernut flour. Fold it into the wet ingredients. The dough should be thick and able to adhere together well.
Roll the dough into balls, and flatten into cookies on the parchment lined cookie sheet. Bake in the oven for 15-20 minutes, or until the cookies are nice and golden all around. Let cool completely.
Once the cookies have completely cooled, melt the chocolate and coconut oil together in the microwave in 15 second increments until smooth and glossy. Drizzle the chocolate on top of the cookies. Let set, or enjoy straight away!
